All bugs and fish will be available at all times. Nothing is seasonal except for home furnishings and clothing. You do want to focus on collecting the bugs, fish and shells whenever you can/whenever you see them (see Hoarder! for more info on those)

You're aiming (only) for level 34 for full trophy completion It's impossible to get game over so you can play at your own leisure and just work on any individual trophy you want at any time.
